Getting Ethan to eat his vegetables is a common struggle around our house (and I am sure it is a struggle all across the country, right?)
If Ethan eats a pea (yes, just one pea) we jump up and down for joy. I am not joking. So, I am always looking for ways to sneak veggies into our meals and sometimes those tricks work and other times they fail.
These cheesy broccoli bites were considered a “success” because Ethan took two bites. TWO! That is bigger than a pea, so I call it a success.
Ainsley and I devoured them and I can honestly say I will make them again and again.
We used a recipe found HERE, but tweaked it a bit to suit our tastes.
Cheesy Broccoli Bites
2 1/2 cups fresh steamed broccoli, chopped
2 cups of shredded cheese, mozzarella and cheddar
3 eggs
salt, pepper, garlic and onion powder (all to taste)
3/4 cup plain breadcrumbs
*Mix all the ingredients together.
*Using your hands, form golf ball sized patties and place them onto a greased baking sheet
*Bake at 375F for 30 minutes or until browned on both sides, flipping halfway through.
*Enjoy them plain or with some yummy ranch dressing dip.
